Turkey Curry – Leftovers

This is a quick and very easy meal to make with another leftover turkey. Enjoy!

 260 g pre-cooked shredded turkey
 40 g coconut oil
 70 g diced onions
 2 1/2 tsp Gram Massala
 1 garlic clove crushed
 1 tsp ground cinnamon
 1 tsp turmeric
 1/2 tsp ground ginger
 1 tsp chilli powder hot
 Pinch of salt and pepper
 400 g coconut milk
 90 g double cream
 2 sprigs of coriander

Add the coconut oil, shredded turkey and diced onions into a large skillet or wok and cooked on a medium-low heat for 5 minutes. Whilst this is cooking add all the herbs and spices and mix thoroughly.

After 5 minutes pour in half of the coconut milk and carry on regularly stirring for another 5 minutes.

Then after a further 5 minutes make sure the turkey is piping hot and fully reheated - if so, add the remaining coconut milk and double cream and mix thoroughly for another 3-5 minutes on a low heat until the sauce has fully heated up.
