Stuffed courgettes

Serving size depends on the occasion. If you are having this dish as a light bite or starter I would say it can serve 2 people, however if you are having it as a main course then it's just 1 serving.

 2 courgettes
 2 dashes oil
 20 g quinoa
 50 g made up vegetable stock
 1 salad tomato
 25 g bell pepper
 45 g black beans (drained)
 25 g Philadelphia
 Handful grated cheese to sprinkle on top
 A couple pinches of salt, black pepper, cayenne pepper and paprika

Preheat the oven

Chop both courgettes in half, length ways. Now scoop out the insides, leaving a thin layer all around to try and keep your base secure. Place the insides of the courgettes into a large bowl, if you have any large chunks quickly cut them into smaller pieces.

Now, pour some oil into an oven dish. You just need a thin covering on the bottom. Then place your scooped out courgettes in the dish and into the preheated oven.

Whilst the courgettes are cooking you need to prepare the inside mix. Firstly, place your quinoa and vegetable stock into a microwavable tub and mix quickly before then placing the lid on, making sure to leave the lid ajar to allow some of the steam to escape. Cook this in the microwave for 5 minutes.

Finely chop your tomato and pepper, then add into the bowl with previously scooped insides of the courgettes. By the time you have done this the 5 minutes on the microwave should be up, give the quinoa a quick mix then place back in the microwave for another 5 minutes.

Add the black beans, Philadelphia, salt, black pepper, cayenne pepper and paprika into your bowl. Once your quinoa has finished the second time it can also get added into the bowl. Mix thoroughly.

Get the courgettes out of the oven and spoon in your mixture. It doesn't matter if they're over flowing slightly, as long as the mixture isn't all going to fall out! Then sprinkle a little bit of cheese over the top and place back into the oven for 10 minuets.

After 10 minutes the courgettes should be fully cooked. Now it's time to serve and enjoy!
