 2 rashers of bacon
 105 g avocado
 1 slice of pre-cut edam cheese
 10 g coconut oil
 2 medium eggs
 20 g double cream
 (optional - chilli flakes to sprinkle on top after)

Pre-heat grill. Then place the bacon on a grill pan for around 12 minutes - after around 10 minutes I take the bacon out and add half of the pre-cut edam cheese to each slice then pop back in the grill for the remaining few minutes.

Whilst the bacon is cooking cut the avocado up.

Place the coconut oil in a pan and melt, then add the egg, double cream and a pinch of pepper and mix thoroughly. Cook on a low heat, making sure you are constantly stirring to prevent the eggs sticking. Once the eggs are scrambled and cooked everything else should be ready too, now you just need to dish it up and then you can enjoy!
