Place the oil and diced beef into a large frying pan or wok and start to cook on a low heat. After 2 minutes increase the heat to medium and add the garlic, ginger and sprinkle the soft brown sugar over the beef. Give a quick stir and then leave to sit for 1 minute.
Add the white wine vinegar, soy sauce, and tap water into a jug and stir. Then slowly pour over the beef whilst constantly stirring.
Keep stirring until the beef looks fully cooked (you may need to cut a piece in half to check fully).
Serve with rice and broccoli and finish off the dish by sprinkling chopped spring onion and sesame seeds over the beef.
