Pre-heat oven to 180 degrees Celsius.
Bring a pan of water to the boil and then place the cauliflower florets in for around 5 minutes (until cooked). Once they're cooked drain the cauliflower and place into an ovenproof dish and just leave on the side until you've made the sauce.
Now place the coconut oil, butter, double cream, 15g of the grated cheese, dijon mustard and a pinch of salt and pepper into a small pan. Cook on a low heat for around 2 minutes, until the butter and cheese have melted and the cream has started to thicken. Make sure you are constantly stirring to prevent burning your sauce.
Take the pan off the heat and whisk in the cream cheese. Once the sauce is smooth pour over the cauliflower and sprinkle the remainder of the cheese on top.
Place the dish in the oven for 12-15 minutes, until cheese is browning and bubbling slightly.
