Quinoa and Avocado Salad

 50 g quinoa
 vegetable stock (approx. 100ml of made stock)
 1 avocado
 a bell pepper (I personally prefer to use an orange one)
 5 plum or cherry tomatoes
 spinach
 cayenne pepper
 black pepper

Boil the kettle and once boiled prepare a mug full of vegetable stock (I am not the biggest fan of gravy therefore I put a tiny bit less stock in than other people and just have more water, it’s all down to personal preference and finding out what works best for you).

Measure the quinoa into a microwaveable tub and ensure the lid is ajar to enable the steam to escape. I use a Sistema microwaveable breakfast bowl as it has a hole to let the steam out of and I can add the rest of the ingredients and just eat it out of here!

Then pour the stock over the quinoa in the tub - you want the stock to be twice as high as the level of quinoa. Then mix it slightly and put it in the microwave on the ‘high’ setting for 5 mins.

Whilst the quinoa is cooking start chopping the bell pepper, spinach and tomatoes. It’s all down to personal preference for how fine you’d like each of these to be. However I personally like them to be smaller then it feels like it’s going further.

Once the microwave has finished, check the quinoa and give it a quick mix. At this point you still want to be able to see some liquid among the quinoa as it hasn’t finished cooking. Therefore, if you think you need to add anymore then add a little bit. Then place this back in the microwave for another 5 mins.

Whilst the quinoa is finishing off cut your avocado up too.

When the the quinoa is finished, check it just to make sure it is soft and doesn’t need cooking for any longer. If it is ready leave the lid off for 30 seconds just to let some of the steam out.

Next, add your chopped avocado, pepper, tomatoes and spinach. Sprinkle some cayenne pepper and black pepper over the top if you want some more flavour and a little spice. Then mix it all together and enjoy!

For those of you who aren't vegan you could mix in some Mayonnaise at the end to help give it a little more flavour too.
