Mushroom Avocado Toast

 100 g mushrooms, sliced
 15 g coconut oil
 2 pieces of toast (make sure you check the ingredients if you want it to be vegan or gluten free)
 85 g avocado, sliced
 Pinch of salt, pepper and chilli flakes

Place your bread in the toaster.

In a small pan start melting the coconut oil on a medium to low heat. Once melted add in the sliced mushrooms along with salt, pepper and chilli flakes. Keep stirring until sauteed.

Cover the toast in the slices of avocado and the mash using the back of a fork.

Spread the cooked mushrooms over the avocado toast.
(You could always add some more seasoning at this stage).

Enjoy whilst the mushrooms are still warm!

    A great idea for breakfast as I sometimes lack inspiration for breakfast recipes. Nice healthy recipe too.
