Mint chocolate mousse

 70 g double cream
 22 g Green & Black's Velvet Edition Mint chocolate
 50 g soft cream cheese
 4 g cocoa powder

Whip the cream until stiff peaks form.

Melt the mint chocolate. I place the chocolate into a glass bowl and then melted it on the hob by placing the bowl into a pan part filled with boiling water. Make sure you keep stirring the chocolate and don't let it burn. As soon as it has melted take it off the hob.

Add the cocoa powder to the melted chocolate and mix in thoroughly. Then add the Philadelphia and mix until smooth.

Next, fold in the whipped cream (making sure you don't over mix it) then place in fridge for at least 30 minutes.
